Portobello Mushroom Sandwich
My favorite sammich! And it really hit the spot this evening. Here’s the rundown:
- Food For Life Baking Ezekiel sprouted whole grain bread
- Portobello mushroom cap
- Water sautéed with balsamic vinegar, garlic, and a little Bragg’s Liquid Aminos.
- Hummus (there’s a lot of great oil-free hummus recipes out there)
- Sliced tomato
- Romain lettuce
- Fresh ground pepper
Sounds weird maybe? But it’s delicious. Sometimes I’ll add a pickle slice or two, but I’m trying to cut down on salt.
Also had some Cuban black bean soup, garnished with cilantro this evening. Recipe from the Forks Over Knives app. While it’s good as-is, it’s even better with some fresh cilantro and avocado added.
