My Shortlist of “Healthy Carbs”

A coworker recently asked if I would put together a list of healthy carbs that I eat. Typically, I try to avoid foods that require labels as much as possible, and stick to whole foods: fruits, vegetables, legumes, nuts, seeds, mushrooms, and whole grains. When I do buy packaged foods, I try to follow the 5-to-1 rule (actually more of a guideline): the ratio of total carbohydrates to fiber should be 5:1 or less in order to ensure you're eating whole foods, as opposed to refined foods. I do sometimes eat foods that fall outside of that range, but it's a good starting point. I also look for foods that contain 1mg of sodium per calorie or less, and foods that provide 15%, or less, or their total calories from fat. Having said that, my list of some of the “healthy carbs” I like can be found below. Not all of them conform completely to my guidelines, but they're all pretty close.
